DIY Recipe: Espresso Streusel Bliss Coffee Cake

Infused with bold espresso and topped with a rich cinnamon crumble, this cake is everything you need to turn your kitchen into your favorite coffee spot.
Ingredients:
For the Cake:
- 2-1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1-1/2 cups granulated sugar
- 3-large eggs, room temperature
- 1 cup sour cream, room temperature
- 1 tbsp vanilla extract
For the Coffee Streusel:
- 1 cup all-purpose flour
- 3/4 cup brown sugar, packed
- 1 tbsp instant coffee or finely ground coffee (Partners Elevate was used in our recipe)
- 1/2 cup unsalted butter, melted
- 1/2 tsp cinnamon
- Pinch of salt
For the Vanilla Glaze:
- 1 cup powdered sugar
- 2-3 tbsp milk
- 1 tsp vanilla extract
Instructions:
- Preheat Oven & Prepare Pan: Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.
- Make the Streusel: In a medium bowl, mix flour, brown sugar, coffee, cinnamon, and salt. Add melted butter and combine until crumbly. Set aside.

Make the Cake Batter:
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream the butter and sugar until light and fluffy (about 3-4 minutes).
- Add eggs one at a time, mixing well after each addition.
- Mix in sour cream and vanilla extract until smooth.
- Gradually add the flour mixture, mixing until just combined.

Assemble the Cake:
- Spread the cake batter into the prepared pan.
- Sprinkle coffee streusel evenly over the batter.
- Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
- Make the Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled cake.
