Sunset Decaf - Martha Montenegro, Colombia
Sunset Decaf is a unique collaboration between Torque Coffee and Martha Montenegro of the El Vergel Estate. This innovative process begins with a 120-hour anaerobic fermentation of the coffee cherries, enriched by the addition of dehydrated passion fruit pulp to infuse the beans with vibrant, fruity flavors. Following fermentation, the beans are carefully dried in mechanical silos for 144 hours to achieve optimal moisture levels. Finally, they undergo a 30-day stabilization period in GrainPro bags, ensuring consistency and preserving their exceptional flavor profile.
Sugarcane Decaffeination Process:
The sugarcane decaffeination process uses ethyl acetate (EA), a naturally occurring compound sourced from sugarcane crops in Colombia's Valle del Cauca region, to remove caffeine from coffee beans. The process begins by moistening the beans with water, allowing EA to circulate through them. The EA binds to the caffeine, effectively extracting it while preserving the majority of the coffee’s flavor compounds. Once the desired level of decaffeination is achieved, the beans are steamed to eliminate any remaining EA residue. The result is a rich, flavorful coffee—just without the caffeine.
